Last night did the Zombiefest Achievement in Timed CoS. We tried different methods, including splitting up the group. What finally worked was 2 tanks and 3 heals (technically 2, since one had to go). The trick is not to do the gather for the top area, but wait for the gauntlet.
First tank went through ahead while second tank picked up the elite adds. Myself and a shammy were healing. I used Renew, Circle of Healing, and Prayer of Mending (my instant stuff) to keep the tank and everyone up, while also spamming my Holy Nova. You can also bubble ppl with your PW:Shield to help mitigate damage, but it can be a time waster.
The thing with the gauntlet though, is every zombie has to be accounted for, so no premature kills! There are exactly 100 zombies down there, so killing even one too early will mess it up. Remember you have to run through fast, so spamming your instant AoE (Holy Nova) and having the tank use DnD etc makes it fast. One minute is all you get from first kill to last.
Questions or alternate ways to do it? Drop me a comment :)

Brewfest DPS Trinket: Mithril Pocketwatch
Another drop from the Brewfest boss is the Mithril Pocketwatch, which is great for DPS. However, as shadow priest, the channeling from Mind Sear and Mind Flay will do better with haste. The beauty of crit is your SW:P and DP ticks with more crits. The Chance on Hit for Spellpower is also a handy perk. If you want to get absolutely technical though, the bonuses from crits as Holy may be worth a second glance here. So, even though I do say it is a dps trinket, holy priests can benefit from it as well.
Again, the fight is easy.. just manage the adds. You have 5 chances to get your drop if everyone has the quest. The adds sometimes comes up from the floor, and standing over it will cause you to knock back. Otherwise, it's a quick fight.
For those of you who don't know, in order to qualify for the quest, just do the Welcome to Brewfest quest in the Brewfest camp at the major city. Once that's done, you can qualify to pick it up or have it shared.

Brewfest Healing Trink: Ancient Pickled Egg
Doing the Brewfest quest in BRD (Save Brewfest), we got to do a boss fight 5 times (one for each person in group). The boss is easy. He does bring on adds, but the fight is an easy heal. If you are on shadow, just SW:P and Mind Sear to clear the room quickly. You can farm it 5 times in about 15 mins. One of the drops was the Ancient Pickled Egg. The spellpower is not bad, but there is a chance on heals that will increase haste.
Haste is great because it makes casting faster. Faster casts mean faster heals, of course. If you want to farm this, just keep finding Direbrew questing parties. Only thing is, the group will only get to do it 4 instead of 5 times if you join them.
So, rather than using up your precious emblems.. get this!
